Pumpkin Pancakes

Yummy Pumpkin Pancake Recipe (Easy)

My husband and I decided to treat the people at his office this morning by making pumpkin pancakes for them. I made the batter and then Andy took it to work with our griddle and fed his co-workers. It was a big success and everyone loved them, so in case you're interested here's the recipe.

2 cups Bisquick (or pancake mix)
2 Tbsp. Brown Sugar
1 tsp. Ground Cinnamon
1/2 tsp. Ground Nutmeg (for less nutmeg flavor use 1/4 tsp.)

Mix dry ingredients in a medium bowl and set aside.

1-2 cups Milk (depending on how thick you like your pancakes)
1 Egg
1/2 cup Canned Pumpkin
1 tsp. Vanilla extract

Mix wet ingredients together in a large bowl and then add the dry mixture and stir together (it should be a little lumpy). Cook on a griddle set at about 300 degrees, or cook over medium to medium high heat on the stove. Using a 1/4 cup measuring cup pour batter onto heated skillet and wait for bubbles in the pancakes to stay on top, then flip pancakes over and finish cooking pancakes on the other side. (The medium heat setting takes the pancakes longer to brown, but if you're patient, they'll turn out perfect!

Yield approx. 12-16 pancakes 4 inch diameter.

May favorite thing to serve them with is Whipped Cream..... Yummy!
